Papad Chaat

#DS26 In this recipe of papad chaat we use fried papad, aalo tikki or bonda, mangodi, dum aloo, chatpata khatta pani, onion etc. It is a famous street food of Satna, a city located in the central Indian state of Madhya Pradesh, is home to a diverse and flavourful cuisine that reflects its rich cultural heritage.

Step 1

First we will fry the 2 papad and keep aside.

Step 2

For aaloo tikki, I take 2 medium size potatoes, boil them, in a bowl mash the potatoes, add salt to taste, few finely chopped coriander leaves, 1/2 tsp red chili powder, 1 tsp roasted cumin powder, 1 tsp cornstarch, 1 tsp bread crumbs, mix, give shape of tikki and shallow fry.

Step 3

For mangodi, soak 1/2 cup moong dal for 1 hour, make a paste in blender, add salt and deep fry.

Step 4

For dum aloo boil 3-4 medium size potatoes, in a pan add oil, add tomatoes, ginger paste saute, then add salt, 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp roasted cumin powder, 1 tsp garam masala powder and mix, add boiled potatoes and mix, add little water,  slightly break the potatoes so that they get mixed with gravy, lastly add coriander leaves.

Step 5

For chatpata khatta pani, make a paste of dhania Pudina and green chilli in a blender, soak 1tbsp imli in 1/2 cup water For half an hour, extract the pulp and strain it, in a bowl add 1 tsp roasted cumin powder, 1/2 tsp black pepper powder, 1 tsp red chilli powder, 1/2 tsp chaat masala, salt to taste, 1/2 tsp black salt, imli pani, dhani pudina paste, add water and mix.

Step 6

Assemble the chat: In a bowl First add fried papad, crush them and add, then add aloo tikki, then add mangodi, break them in small pieces, then add dum aloo, add khatta pani, pour the chaat in a Dona or bowl, add chopped onion and chatpata khatta pani and serve.
