Step 1

Wash and soak the moong dal for 2 3 hours. Drain the water and grind it coarsely without adding water.

Step 2

Heat oil in a pan. Add cumin seeds and hing.

Step 3

Add ginger-green chilli paste and sauté for a few seconds.

Step 4

Add the coarsely ground moong dal, turmeric, coriander powder, red chilli powder, garam masala, amchur powder and salt.

Step 5

Cook on low flame stirring continuously, until the stuffing becomes dry and well cooked.

Step 6

Switch off the flame and mix in fresh coriander. Let the stuffing cool completely.

Step 7

Make a soft dough using wheat flour, salt, oil and water. Rest it for 15 20 minutes.

Step 8

Take a dough ball, roll it slightly, place 2 3 tbsp moong dal stuffing in the centre and seal the edges.

Step 9

Gently roll into a paratha using dry flour.

Step 10

Cook on a hot tawa with ghee or oil until both sides are golden and crispy.
