Step 1

Mix maida, sooji, salt and oil. Add water gradually and knead a stiff dough.

Step 2

Cover and rest for 20 minutes.

Step 3

Divide the dough into small balls and roll into small puris.

Step 4

Deep fry on medium heat, gently pressing with a spoon until they puff up and turn golden. Let them cool completely.

Step 5

Make a small hole on the top of each kachori.

Step 6

Fill with boiled potatoes, sprouts and black chana.

Step 7

Add whisked curd generously.

Step 8

Drizzle green chutney and tamarind-date chutney.

Step 9

Sprinkle chaat masala, red chilli powder and roasted cumin powder.

Step 10

Top with chopped onions, sev, pomegranate seeds and coriander leaves.

Step 11

Serve immediately and enjoy crispy, delicious Mumbai-style Raj Kachori!
