Step 1

Wipe moong dal with a wet napkin, roast until crisp, cool, grind, and sieve to make flour.

Soak moong dal flour with curd for 1-2 hours. If you want, you can Add chopped vegetables to the batter.

Heat oil, add mustard seeds and curry leaves for tadka, then mix into batter with salt. Just before steaming, add eno to batter and mix gently.

Grease idli moulds with oil. Pour batter into moulds and steam for 12-15 minutes. Check doneness, remove from heat,

Soft and spongy Moong dal flour Idli is ready. serve with coconut chutney or sambhar.
