Season and whisk: Add sendha namak and whisk the batter well until it becomes light and fluffy.

Step 4

Fry the vadas: Heat refined oil in a pan. Drop small portions of batter into the hot oil and deep-fry until golden and cooked through.

Prepare for serving: When ready to serve, gently remove the vadas and lightly press out the excess water.

Step 8

Add the toppings:Arrange the vadas in a serving bowl. Pour fresh yogurt over them and sprinkle sendha namak, roasted cumin powder, coriander powder and red chilli powder.

For Chutney : Soak the tamarind in warm water until it softens.
