Step 1

Prepare the Potato Filling

Heat oil in a pan.

Step 3

Add mustard seeds and let them crackle.

Step 4

Add curry leaves and ginger-garlic paste. Sauté for a minute until fragrant.

Add turmeric, red chilli powder, and salt.

Step 6

Mix in the mashed potatoes and cook for 2–3 minutes.

Remove from heat and let the filling cool slightly.

2. Make the Besan Chilla

In a bowl, combine besan, turmeric, red chilli powder, ajwain, and salt.

Add water gradually to make a smooth, lump-free batter of pouring consistency.

Heat a non-stick pan and lightly grease it.

Step 12

Pour a ladleful of batter and spread into a thin round chilla.

Cook on both sides until golden with a few crisp spots.

3. Assemble the Wrap

Place the warm besan chilla on a plate.

Spread green chutney on one side.

Next to it, sprinkle a layer of dry garlic chutney.

Arrange sliced onions beside the chutney.

Place the prepared potato filling over the onions.

Roll the chilla tightly into a wrap.
