For the batter: In a mixing bowl combine together grated cucumber , tomato , onion , beetroot , green chilli paste , grated ginger , coriander leaves and salt
Then add Amaranth , Buckwheat flour , gram flour and salt
Mix them nicely with a spoon
Add little water to adjust the consistency of the batter
It should be medium thick
For the stuffing: In a mixing bowl combine together all the above ingredients except hung curd dip and green chutney
Mix them well with a spoon . Now divide this mixture into two portions
Add hung curd dip in one portion and green chutney to the other portion
The stuffing is ready
For hung curd dip: In a mixing bowl combine together hung curd grated cheese and malai , mix them well with a wire whisk
Now add garlic paste , oregano and salt , blend them well into a smooth and creamy mixture. The dip is ready to use
For green chutney: In a mixer jar grind almonds into a fine powder
Then add all the other ingredients to it and again grind it . Grind it into a fine paste
Take it out in an airtight container
No need to add water to the chutney
For cooking the chilla: Heat a tawa , first on high flame , then make the flame medium
With a ladle spread a chilla on the hot tawa , it should be medium thick
Sprinkle little oil on the chilla
After a few seconds flip over the chilla to the other side and cook it from the other side too
When it becomes light brown from both the sides , then take it out in a plate
In this way, prepare the other chilla also
For Assembling: Take a cookie cutter and cut the chillas so that they are equal sized pieces
Take a small bowl and mix together 2 tbsp of hung curd dip and 1 tbsp of green chutney
Now take a serving plate , first spread the hung curd and green chutney dip in circular motion, on the outer side
Then place one chilla in the center . Spread the hung curd stuffing mixture on it nicely
Then place the second chilla on it
Now spread the green chutney stuffing all the second one
In this way repeat the process until the fifth chilla comes on top
Put little hung curd and green chutney dip in the center of the topmost chilla , put a green chutney drop in the center.
Garnish with fresh coriander leaves . Decorate with few drops of green chutney
