Step 1

Boil sugar syrup: Add 1 cup sugar + 3 cups water to a pot. Boil until sugar dissolves completely. Keep it hot on low flame.

Step 2

Roast flour: Heat 1 cup ghee in a heavy kadhai on medium flame. Add 1 cup atta. Roast continuously for 12-15 mins.

Step 3

Look for color: Keep stirring until atta turns deep golden brown and smells nutty. The ghee will start separating. Don’t stop stirring or it burns fast.

Step 4

Add syrup: Lower flame. Slowly pour the hot sugar water while stirring constantly. It will splutter, so be careful.

Step 5

Cook: Stir vigorously for 3-4 mins until it thickens and leaves sides of kadhai. Ghee will start oozing out.

Step 6

When it forms a soft mass and ghee separates, it’s ready. Takes about 4-5 mins after adding water.
