Step 1

Make the batter: Mix maida, cornflour, besan and baking powder. Add curd and water gradually to make a smooth, lump-free, flowing batter.

Step 2

Cover and rest the batter for 30–45 minutes.

Step 3

Transfer the batter into a jalebi squeeze bottle or piping bag.

Step 4

Prepare syrup: Boil sugar and water until you get a one-string consistency. Add cardamom, saffron and lemon juice. Keep it warm.

Step 5

Heat oil/ghee on medium heat. Pipe the batter into spiral shapes, making 2–3 rounds.

Step 6

Fry until the jalebis are crisp and golden on both sides.

Step 7

Immediately transfer them into warm sugar syrup for 30–60 seconds.

Step 8

Remove, let the excess syrup drip off, and serve hot and crispy.
