Ghevar

#MD26 Ghevar is a traditional Rajasthani sweet that holds beautiful memories of family celebrations and festive moments. My mom loves homemade ghevar because of its crispy texture, rich taste and authentic flavor. What makes this recipe special is the love and patience with which it is prepared at home and finally garnished with crunchy almonds that make it even more delicious.

Step 1

In a large bowl, add ghee and ice cubes. Whisk until creamy and smooth. Remove the ice cubes.

Step 2

Add maida slowly and mix well. Pour chilled water and milk little by little to make a thin flowing batter without lumps.

Step 3

Heat ghee or oil in a deep heavy pan. Pour one ladle of batter from height into the center of hot oil. Wait a few seconds and repeat the process 3–4 times to create the ghevar pattern.

Step 4

Cook until the ghevar becomes golden and crispy. Carefully remove and drain excess oil.

Step 5

For sugar syrup, boil sugar, water and cardamom until slightly sticky.

Step 6

Dip the ghevar lightly in sugar syrup or pour syrup over it.

Step 7

Garnish with chopped almonds and serve.
