Method Tomato chutney: First, heat oil in a pan. Add split urad dal and chana dal, and lightly fry them until golden.

Add the chopped garlic and sauté it well.

Add chopped onions and cook until they turn soft.

Now add mustard seeds, dry red chillies, and salt. Then add the chopped tomatoes.

Finally, add Kashmiri red chilli powder and turmeric powder. Cook the mixture well until the tomatoes are soft and cooked.

Let the mixture cool down completely, then grind it and make a smooth chutney.

Method for uttpam battar: Wash and soak the fox nuts, chana dal, urad dal, poha, and rice together for 6 to 7 hours.

Add only enough water to soak the ingredients properly.

Grind everything into a smooth batter .

Transfer the batter into a bowl, beat it well for about 2 minutes, then leave it covered for 10 hours to ferment.

Once the batter is fermented, add 1 tbsp oil, 1 tsp deshi khand and salt. Mix well.

On a hot tawa (griddle), make two small plain uttapams.

For the third uttapam, top it with chopped vegetables like red, yellow, and green capsicum (bell peppers), tomato, and onion. Cook it well on both sides.

To Assemble the Sandwich: Take one plain uttapam and spread thick green chutney over it.
Step 15
Place the second plain uttapam on top and spread tomato chutney over it.

Finally, place the vegetable-topped uttapam on top.

Your Fox Nuts Uttapam Sandwich is ready! Serve hot with green and red chutneys.
