Dry Cabbage and Potato Sabzi

#PC26 :– Dry Cabbage and Potato Sabzi is a simple, homestyle Indian vegetable dish made with fresh cabbage, potatoes, and aromatic spices. This quick and flavorful sabzi is prepared in a pressure cooker and makes a delicious accompaniment to roti, paratha, or dal-rice.

Step 1

Heat oil in a pressure cooker and add cumin seeds. Let them splutter.

Step 2

Add asafoetida and green chillies.

Step 3

Add the chopped potatoes and cabbage. Mix well.

Step 4

Add turmeric, coriander powder, red chilli powder, and salt. Mix everything thoroughly.

Step 5

Cover the pressure cooker and cook for 1 whistle on medium heat.

Step 6

Turn off the heat and allow the pressure to release naturally.

Step 7

Open the cooker and cook the sabzi uncovered for 2–3 minutes if there is excess moisture.

Step 8

Add garam masala and fresh coriander. Mix gently.

Step 9

Serve hot with roti, paratha, or dal-rice
