Mix chicken with all marinade ingredients. Rest for at least 1 hour (overnight = best flavor)

Boil rice with whole spices & salt. Cook till ~70% done (slightly firm). Drain and keep aside
Heat oil + ghee. Add marinated chicken. Cook till ~80% done (gravy thickens)
In a heavy pot: First layer: chicken, Second: rice, Add fried onions, mint, coriander, saffron milk. Repeat layers
Cover tightly (or seal with dough). Cook on low heat for 20–25 mins
Gently mix layers. Serve hot with raita or salad
