Aloo Puri

Step 1

Aloo Sabzi: Heat oil, add cumin seeds, let them splutter.

Step 2

Add green chilies & ginger, sauté. Add tomatoes, cook till soft.

Step 3

Add turmeric, chili powder, coriander powder, salt.

Step 4

Add boiled potatoes, mix well.

Step 5

Add water, cook 5–7 minutes.

Step 6

Sprinkle garam masala & coriander leaves.

Step 7

Ready—slightly thin gravy tastes best with puri.

Step 8

Puri: Mix flour, salt, and semolina. Knead into a stiff dough using water. Rest for 10–15 minutes. Roll small discs. Deep fry in hot oil until golden & puffed.
