Step 1

Wash raw mangoes thoroughly and transfer in a pressure cooker. Add sufficient water and cook on medium heat till 2 whistles are released.

Step 2

Open the lid once the pressure settles completely. Peel, deseed and remove the pulp. Allow to cool.

Step 3

Transfer the pulp in a grinder jar. Add sugar and grind to fine paste.

Step 4

Heat a shallow nonstick pan. Add the ground mixture, roasted cumin powder, green cardamom powder, black salt and saffron and cook on medium heat for 10-15 minutes or till the mixture is thick.

Step 5

Allow to cool completely.

Step 6

To serve, take some ice cubes in a serving glass.

Step 7

Add 2-3 tbsps of prepared raw mango mixture in each glass

Step 8

Top up with chilled water, mix and serve.
