Step 1
Mix grated lauki, 9-grain flour, sooji, spices, coriander, oil and lemon juice in a bowl.
Step 2
Knead into a soft dough using the water released from the lauki. Add little water only if needed.
Step 3
Grease your hands and shape the dough into cylindrical rolls (muthiya).
Step 4
Steam the muthiyas for 20-25 minutes.
Step 5
Let them cool slightly and cut into pieces.
Step 6
Heat oil in a pan, add mustard seeds, sesame seeds, hing and curry leaves.
Step 7
Add the sliced muthiyas and sauté for 3-4 minutes.
Step 8
Serve hot with green chutney or tea. Healthy, nutritious and perfect for breakfast or evening snacks!
