Green Patishapta with Spinach Puree

Patishapta is an integral part of Poush Sankranti and I made with spinach purée to give a twist

Step 1

Wash spinach, Blanch and add to blender

Step 2

In a bowl add Maida, granulated sugar, rice flour, salt and milk gradually to make a batter

Step 3

Add the batter to blender and blend smooth, pour into a bowl

Step 4

In a pan add grated coconut and Nolen gur and mix to for the filling

Step 5

In a pan add a ladle of batter and add the filling, roll and set aside

Step 6

Serve with Nolen gur
