Green Mint Pulao

#PC26 :–Green Mint Pulao is a fragrant, delicious and refreshing rice dish made with fresh mint, coriander, green chilies and aromatic spices. Its beautiful green colour makes it look tempting, while the fresh mint gives it a wonderful flavour. This easy one-pot pulao is perfect for lunch or dinner and can be served with raita, curd or salad.

Step 1

Wash and soak the basmati rice for 15–20 minutes. Drain and keep aside.

Step 2

Grind mint leaves, coriander leaves, green chilies and ginger with a little water to make a smooth green paste.

Step 3

Heat oil or ghee in a pressure cooker. Add cumin seeds, bay leaf, cinnamon, cloves and cardamom. Sauté for a few seconds.

Step 4

Add sliced onion and cook until lightly golden.

Step 5

Add the green mint-coriander paste and sauté for 2–3 minutes until the raw smell disappears.

Step 6

Add the soaked rice and gently mix so that the rice is coated with the green masala.

Step 7

Add water, salt and lemon juice. Mix gently.

Step 8

Close the pressure cooker and cook for 1 whistle on medium heat. Turn off the heat and allow the pressure to release naturally.

Step 9

Open the cooker and gently fluff the rice with a fork.

Step 10

Serve hot with fresh curd, raita or salad.
