Step 1

In a non-stick pan, combine milk powder, fresh cream, powdered sugar, milk and ghee. Cook on low flame, stirring continuously until the mixture thickens and leaves the sides of the pan.

Step 2

Make the gulkand filling: Mix gulkand, milk powder, desiccated coconut and chopped pistachios.

Step 3

Add rose petals if desired. Combine into a soft, non-sticky filling and divide into 10–12 portions.

Step 4

Cool the mawa until comfortable to handle. Take a portion, flatten it, place the gulkand filling in the centre and seal. Place in a greased modak mould and press gently to create the shape.

Step 5

Decorate with pistachios and dried rose petals. Refrigerate for 30 minutes to set before serving.
