Step 1
In a non-stick pan, combine milk powder, fresh cream and milk. Mix well to make a smooth mixture.
Step 2
Cook on low flame, stirring continuously, until the mixture thickens and starts leaving the sides of the pan.
Step 3
Add ghee and powdered sugar and continue cooking for 2–3 minutes.
Step 4
Add the desiccated coconut, cardamom powder and chopped nuts. Mix well.
Step 5
Cook until the mixture comes together like a soft dough. Don’t overcook, otherwise the modaks can become hard.
Step 6
Transfer to a plate and allow it to cool until comfortable to handle.
Step 7
Grease a modak mould lightly with ghee.
Step 8
Fill the mixture into the mould, press firmly and demould carefully.
Step 9
Garnish with a little desiccated coconut and chopped nuts.
