Prepare the Paneer & Saffron Grate the paneer and knead it well with your hands until it becomes smooth and soft. Take a little warm milk in a small cup and soak the saffron strands in it
Make the Milk Base In a pan, mix the milk powder and milk together off the heat until smooth
Cook the Mixture Place the pan on the stove and heat the milk mixture. Add the powdered sugar and stir. Once it thickens slightly pour in the saffron infused milk
Add Paneer As the mixture thickens further, add the softened paneer and stir continuously
Cook to Dough Consistency Keep stirring until the mixture becomes thick and starts leaving the sides of the pan. Turn off the heat and transfer the mixture to a plate to cool down
Shape the Modaks Grease a modak mold with a little ghee. Fill it tightly with the cooled mixture press and open to shape the modaks. Repeat for the remaining mixture
Garnish (Optional) To make them look more appealing, place chopped dry fruits or a few saffron strands inside the mold before adding the mixture
