Step 1
Bring water to a boil in a pan. Add a pinch of salt and a little ghee. Gradually add rice flour, stirring continuously to avoid lumps. Cover and cook on low heat for 2–3 minutes. Transfer the mixture to a plate and knead while it is still warm, adding a little warm water if required.
Step 2
Knead until you get a soft, smooth, and pliable dough. Place a small portion of the dough into the modak mould, add the filling, and shape the modak. Steam the modaks Place the modaks in a greased steamer plate, leaving some space between them. Steam for about 10–12 minutes on medium heat.
Step 3
Once the outer covering becomes slightly translucent and shiny, turn off the heat. Let them rest for a couple of minutes before serving. Garnish with chopped nuts.
