Whole Coriander Seeds Panjiri

#KJ6 Panjiri is a traditional and highly nutritious Indian sweet or *prasad* (offering), primarily prepared for Lord Krishna on the occasion of Janmashtami. Whole Dhaniya (Coriander Seeds) Panjiri: This is made especially for Janmashtami. It is prepared using whole coriander seeds, ghee, dry coconut, fennel seeds,carrom seeds, cardamom nutmeg powder and dry fruits. This *prasad* is consumed after offering it to *Bal Krishna* (Infant Krishna) following his birth at midnight.

Step 1

In a pan, dry roast the coriander seeds, black peppercorns, carom seeds, and grated dry coconut separately over a low flame.

Step 2

Add a spoonful of ghee and lightly roast the cashews and almonds. After turning off the heat, lightly roast the rose petals; transfer all the roasted ingredients to a bowl and let them cool down completely.

Step 3

Once cooled, add the rock sugar, cardamom-nutmeg powder, and the dry fruit powder (saffron-pistachio blend) and mix well. Now, grind the mixture in a mixer-grinder, ensuring it remains slightly coarse. The Coriander and Dry Coconut Panjiri is ready.

Step 4

To offer *Bhog* to Lord Krishna, decorate the offering with rose petals and dry fruits. After the offering is made, partake of the *Prasad*.
