Garlic, ginger, soy, chilli, and smoky heat, when layered into a Japanese sushi roll, the result is a deeply satisfying collision of umami and spice. Imagine a nori sheet cradling seasoned sushi rice, not with the usual wasabi-forward freshness, but with a filling that carries the unmistakable punch of Manchurian-style sauce, five-spice or even a whisper of chilli oil. The rice itself acts as a neutral canvas, absorbing a faint tang of rice vinegar while the fillings do the bold, unapologetic talking.

Tips and Tricks

  1. Use the rice cooker to make delightfully fluffy sushi rice. Allow the rice to rest for 10 minutes before seasoning to create the perfect sticky texture for rolling.
  2. A nonstick pan allows tofu to cook uniformly with little oil while keeping it from breaking apart, giving the filling a lovely golden crust.
  3. Using a vegetable cutter or julienne slicer, cut thin, consistent strips of cucumber and carrot.
  4. An induction provides precise temperature control, allowing you to cook tofu without burning and guaranteeing uniform heat dispersion throughout the cooking process.
  5. To get a crispier texture, air-fry the marinated tofu at 180°C for 8-10 minutes before adding it to the rolls.
Step 1

Wash and rinse the rice until the water is clear. Cook the rice and let it rest for 10 mins.

Step 2

In a bowl, add sugar, salt and rice vinegar. Fold gently into the warm rice and allow it to cool.

Step 3

In another bowl, combine soy sauce, ginger, garlic and sesame oil. Add in the tofu slices.

Step 4

Let the tofu marinate for 10 minutes. Heat the non-stick pan and fry the tofu until light brown.

Step 5

Place a nori sheet on the bamboo mat or clean kitchen towel. Place a thin layer of rice.

Step 6

For the next layer, arrange carrots, tofu, cucumber, and edamame at the centre in a line.

Step 7

Roll tightly using the bamboo mat or kitchen towel. Seal edges with water.

Step 8

Slice into bite-sized pieces and sprinkle sesame oil on top. Serve with soy sauce, pickled ginger and wasabi.
