Alu Bokhra Khichudi

#DS26 A sweet khichudi made with Aloo Bokhra or plum and is from 20th century Bengali cuisine. A classic recipe and a lost one. Goes best with Peyazi or Sour chutney

Step 1

Wash the Alu Bokhra, cut into pieces and soak for 30 mins

Step 2

Boil the Alu Bokhra and set aside after discarding the boiled water

Step 3

Wash the Masor Dal and Gobindobhog rice and keep together

Step 4

In a Mati’r Hari heat ghee, add bay leaf, cinnamon stick, green cardamoms, cloves and stir for 2-3 seconds

Step 5

Add ginger paste and stir to get rid of raw smell

Step 6

Add Masor Dal and Gobindobhog rice and stir continuously to fry

Step 7

Add coconut milk and cover to cook

Step 8

Add 1 cup hot water if needed

Step 9

When Khichudi is done set aside

Step 10

In another matka add Alu Bokhra, sugar, water and stir to make a syrup, add few Green cardamoms and saffron strands, cover to cook for 10 mins

Step 11

Add the Alu Bokhra into the Khichudi and stir well

Step 12

Cover to cook for 10 mins and set aside to serve
