Step 1
First wash the methi leaves and chop them.

In a bowl add aata, besan, salt, turmeric powder, red chilli powder, baking soda, lemon juice, sugar, crushed green chilli and ginger and mix well. Then add chopped methi leaves and mix

Now add little water and make a soft dough(don’t make it too soft or sticky), now apply oil in palm, give the dough cylindrical shape, don’t make too thick or thin cylinders.
Step 4
Now arrange the roll in a greased steamer plate with holes and steam in the steamer for 20 minutes, Check with fork or knife if it’s done or not, if spoon comes out clearly it’s done.
Step 5
Let it cool, then cut in round pieces.
Step 6
In a pan add oil, then add mustard seeds, hing, sesame seeds and curry leaves, let them splutter, then add the steamed muthiya pieces and saute from both sides.
Step 7
Serve with tomato sauce or green chutney.
Step 8
For green chutney in a blender add coriander leaves, green chilli, roasted peanuts, garlic, salt and grated coconut, blend together.
