Wash and soak basmati rice for 20 minutes. Cook until 90% done and keep aside.
Heat oil and ghee in a pan. Add cumin, bay leaf, cinnamon, cloves and cardamoms.
Add sliced onions and sauté until golden.
Add ginger-garlic paste and green chillies. Cook for a minute.
Add tomatoes and cook until soft.
Add turmeric, red chilli powder, biryani masala and salt.
Add all vegetables and cook for 4-5 minutes.
Mix in curd and paneer cubes. Cook for 2 minutes.
Layer the cooked rice over the vegetable-paneer mixture.
Sprinkle coriander and mint leaves. Cover and cook on low flame for 10 minutes (dum).
Gently mix and serve hot with raita or salad.
