Gently flatten the mini idlis and place them in muffin moulds or small bowls to make cup shapes
Brush with a little oil and bake or air-fry at 180°C for 8-10 minutes until crisp.
In a bowl, mix boiled sprouts, onion, tomato, chaat masala, cumin powder, and salt.
Fill the crispy idli katoris with the sprouts mixture.
Top with curd, green chutney, and tamarind chutney.
Garnish with sev and fresh coriander.
