Grind the soaked moong dal into a coarse paste.
Mix it with mashed potatoes, paneer, vegetables, spices, salt, and cornflour.
Divide the mixture into three portions and prepare the green, white, and orange layers.
Flatten a little mixture of each colour and place them one over another.
Roll gently to make small layered bites.
Refrigerate for 15 minutes.
Shallow fry or air fry until golden and crispy.
Serve hot with mint chutney or tomato ketchup.
