Step 1
Chop ridge gourd into medium size long chunks and so as Potato. Marinade potato chunks in slight salt for 10 – 15 minutes. In moderately heated pan / kadhai add mustard oil, allow to heat then add Nigella seeds and allow to sizzle.

Then add potatoes (squeeze water) and sauté for 3-4 minutes.
Step 3
Then add ridge gourd + green chilli + salt and sauté for 5-6 minutes. Ridge gourd shrinks and release water.
Step 4
Add water + sugar and cook for 4-5 minutes till veggies are cooked. Lastly add 1/2 tsp of mustard oil and stir well.
Step 5
Dish is ready to serve. This dish goes very well with hot steamed rice.
