Step 1
Firstly in a blender jar,add chopped mango and sugar. Then blend them smooth and keep aside. Now heat a thick bottom saucepan or kadhai add 2 Tbsp ghee .Once ghee is hot add cashew nuts fry for 2 minutes then add raisins and fry for 1 to 2 another mins on low flame and take them out.
Step 2
In the same kadhai add suji. Suji roast for 5 minutes or until aromatic on low flame. Add water and cook for 7 minutes or until thick consistency.Stir occasionally.
Step 3
Add cardamom powder and prepare mango sugar puree. Cook until smooth texture and thick consistency on medium flame and stir continuously.
Step 4
Then turn off the flame and add remaining Tbsp ghee and mix it. Delicious Mango Kesari is ready to serve. Serve warm or chilled per your choice. Garnish with some chopped nuts and seeds. ENJOY!!
