#BP26 Palak Besan Chilla is a healthy and nutritious savory Indian pancake made with gramflour, rice flour, chopped onion, ginger garlic paste, finely chopped spinach and mixed vegetables of choice and fresh herbs.Adding spinach enhances the nutritional value as well as it imparts and unique taste to the chilla.These chillas are best served with curd, mixed pickle, green chutney or Hot and Sweet Tomato Sauce and relished in breakfast.

Step 1

Finely chop spinach.Wash and drain water completely. Mix besan with rice flour to imparts crispness to the chillas.Add 1 tsp hot oil and salt to taste. Add ajwain and other dry masalas.Mix all.Then add water gradually and blend well to make a semi thick batter of pouring consistency.

Step 2

Make sure there are no lumps in the batter.Add lemon juice .Then add chopped onion,spinach and other chopped vegetables. Also add ginger garlic paste and whisk well.Now add Eno Fruit Salt and mix to combine all.

Step 3

To cook : Heat oil in a non-stick pan on medium heat.Add a ladleful batter and spread with the back of the ladle.It should look like an omelette of medium thickness.Cook for 3 minutes till the edges start to brown and can be lifted easily.Sprinkle some sesame seeds and press them.

Step 4

Then flip the chilla and cook the other side till golden brown and crispy.Transfer the cooked chilla on a plate and repeat the same process of frying other chillas.Serve crispy hot Palak Besan Chilla for a hearty breakfast with curd, mixed pickle, green chutney or Hot and Sweet Tomato Sauce and relish!
