Prepare Batter: Mix gram flour, semolina, turmeric, salt, sugar, ginger-chili paste, lemon juice, and water to make a smooth, thick batter.Add Eno

Just before steaming, add Eno and mix gently.

The batter will become fluffy.

Steam Pour into a greased plate and steam for 15–20 minutes.

Crumble (Make Khamni): Once cooled slightly, crumble the steamed khaman into small granules using hands or a mixer (pulse lightly).

Step 6

Prepare Tempering: Heat oil, add mustard seeds, sesame seeds, curry leaves, and green chilies.

Step 7

Add sugar + water mixture and bring to a boil.6. Mix

Step 8

Pour the tempering over the crumbled khaman and mix well. Garnish

Step 9

Top with Khamni sev, coriander, Serve With Green Papaya Chutney, Fried green chilies and Ginger Tea
