Dal Baati Churma (Traditional Rajasthani Meal)

Step 1

Prepare a stiff dough using wheat flour, sooji, ghee and salt with water,

Step 2

Shape into medium sized balls (baati) and bake or cook on low flame till golden and crisp from outside and soft inside, then dip hot baati in ghee.

Step 3

Wash and soak all dals for 15–20 minutes, pressure cook till soft, heat ghee in a pan, add cumin seeds and hing,

Step 4

Then add garlic, ginger, green chillies and onion and sauté till light golden, add tomatoes and cook till soft, mix in turmeric, red chilli powder, coriander powder and salt,

Step 5

Add cooked dal and mix well, adjust consistency with water and simmer, finally add garam masala and cook for a few minutes.

Step 6

For churma, take some baati, crush them in mixer while warm, add ghee, rose surup and powdered sugar and mix well, add dry fruits if using and mix till crumbly.

Step 7

Serve hot dal with ghee-dipped baati and sweet churma.
