Wash and soak basmati rice for 20–30 minutes.
Boil water with whole spices (bay leaf, cloves, cinnamon, salt).
Add rice and cook till 70%done. Drain and keep aside.
Prepare Masala: Heat oil + ghee in a pan.
Add sliced onions and fry till golden brown.
Add ginger-garlic paste and green chilies, sauté.
Add tomatoes and cook till soft.
Add all spices (turmeric, red chili, biryani masala, salt).
Add vegetables and cook for 5–7 minutes.
Add curd, mix well and cook till oil separates.
Layering: In a pot, spread a layer of rice.
Add a layer of vegetable masala.
Repeat layers.
Top with coriander, mint, and a little ghee.
Dum Cooking: Cover tightly and cook on low flame for 10–15 minutes.
You can place a tawa below for even heat
