Palak Corn Sabji/ Spinach Corn Curry

Step 1

Blanch the spinach in hot water for 2–3 minutes and grind it into a smooth puree.

Step 2

Heat oil in a pan, add cumin seeds and a pinch of hing, then add chopped onions and sauté till light golden,

Step 3

add green chilli and chopped tomato and cook till soft, mix in turmeric, red chilli powder, coriander powder and salt,

Step 4

then add the prepared spinach puree and cook for a few minutes, add boiled sweet corn and mix well,

Step 5

adjust consistency with a little water and cook on low flame till everything blends nicely,

Step 6

finally add garam masala and a little cream for richness and cook for another minute.
