Wash and soak samak rice for 30 minutes

Drain and grind it coarsely (like phirni texture).

Heat milk in a pan and bring to a boil

Add ground samak rice and cook on low flame

Stir continuously to avoid lumps

Cook till thick and creamy.

In another pan, add 2–3 tbsp sugar with 2 tbsp water

Cook on medium flame until it turns golden brown (caramel).

Slowly pour caramel into the phirni (be careful, it may bubble).

Mix well to get a rich caramel flavor.

Add remaining sugar, cardamom, and saffron

In ghee, roast dry fruits and add to phirni.

Let it cool and refrigerate for 1–2 hours

Serve chilled, garnished with nuts
