The grand feast of Onam Sadya is never truly complete without the distinctive crunch of golden yellow banana chips, known locally as upperi. While that classic method delivers great flavour, it can be messy, heat-intensive, and leaves the chips soaking in excess oil. Making them in an air fryer allows you to recreate that exact satisfying snap and rich coconut aroma using just a fraction of the oil.
Ingredients: 2 raw bananas 1 tablespoon coconut oil 1/2 teaspoon turmeric powder 1/2 teaspoon salt 2 tablespoons water
Peel the raw bananas and slice them into thin, uniform rounds using a mandoline slicer.
Mix the salt, turmeric powder, and water together in a small cup until dissolved.
Toss the banana slices gently with coconut oil and half of the turmeric salt water.
Arrange the slices in a single layer inside your Prestige air fryer and cook at 180 degrees Celsius for 12 to 15 minutes, shaking the basket halfway.
Sprinkle the remaining turmeric water over the chips during the last two minutes of air frying, then let them cool completely so they crisp up.
