A special variation of rice, which is cooked in a traditional South Indian style, is thengai sadam. It is white rice cooked with coconut and spices to upgrade the palate a couple of notches.
Ingredients: 2 cups rice 1 cup grated coconut 2 tbsp oil 1 tsp mustard seeds 1 tsp urad dal 1 tsp chana dal 2 dry red chillies 1-2 green chillies 10 curry leaves 2 tbsp peanuts Salt, to taste
Cook the rice on an induction stove first and fluff it up. Set aside and let it cool.
Set the induction stove on medium heat. Add oil to the pan and add mustard seeds.
After they splutter, add urad dal, chana dal, peanuts, dried red chillies, green chillies and curry leaves.
Sauté until goldenish in colour. Add in the grated coconut and stir fry for 1-2 minutes.
Add the cooked rice and mix everything. Remove from the induction stove and let it cool. Serve!
